An awesome healthy alternative to the usual blueberry muffin.
- ¾ cup all-purpose flour
- ¾ cup whole wheat flour
- ¾ cup white sugar
- ¼ cup oat bran
- ¼ cup quick cooking oats
- ¼ cup wheat germ
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 1 cup blueberries
- ½ cup chopped walnuts
- 1 banana, mashed
- 1 cup buttermilk
- 1 egg
- 1 tablespoon vegetable oil
- 1 teaspoon vanilla extract
I have hypoglycemia and can't take processed (refined) sugar. Freaks out my insulin level. Instead of sugar I use either Splenda or add dried fruit powders to my muffins, breads, and pies. The fruit powder adds flavor, antioxidants, valuable enzymes, and vitamins and minerals. If you want to cut out the sugar, you can try to find dried fruit powders at your specialty store or order them online from a health food manufacturer in Buffalo, NY. Its called Federal Laboratories. They make health food raw materials for the big brands that put them into capsules and sell them for a fortune in health food stores. They sent bulk blueberry powder to me in a double-sealed bag and mine has kept for over a year. They have hundreds of pure fruit and vegetable powders. If it grows on earth, they sell it. I bough some veggie powders to add to stew and shepherds pie and it tasted phenomenal, plus naturally thickened it up w/o adding flour (another carb no-no).
